- White fish fillet — to buy600 g
- Onion — to buy1
- Garlic — to buy3 cloves
- Ginger — to buy1 piece
- Turmeric — to buy1 tsp
- Lemongrass — to buy1 stalk
- Tomato — to buy2
- Chili pepper — to buy1
- Fresh cilantro — to buy1 bunch
- Olive oil — to buy2 tbsp
Preparation
Cut the fish into large chunks and salt lightly, let rest for 10 minutes.
Heat the oil in a pan and sauté the onion, garlic and ginger for 5 minutes.
Add the turmeric and crushed lemongrass, cook for 1 minute.
Add the diced tomato and let it simmer down for 5 minutes until it forms a sauce.
Gently place the fish pieces into the sauce, cover halfway with water, cover and simmer for 12-15 minutes without stirring too much so the fish does not break apart.
Add the chili and adjust the seasoning, serve with white rice and fresh coriander.
