Chicken in peanut sauce

Ingredients
- Chicken — to buy800 g
- Onion — to buy1
- Tomato — to buy3
- Garlic — to buy2 cloves
- Peanut paste — to buy4 tbsp
- Chili pepper — to buy1
- Neutral oil — to buy2 tbsp
- Stock — to buy400 ml
- Salt — to buy1 pincée
- Pepper — to buy1 pincée
Preparation
Cut the chicken into pieces, season with salt and pepper.
Heat the oil in a Dutch oven over medium-high heat and brown the chicken pieces on all sides for 6-8 minutes, then set aside.
In the same pot, sauté the sliced onion for 4-5 minutes, add the crushed garlic and sliced chili, and cook for 1 minute until fragrant.
Add the diced tomatoes and let them stew for 5 minutes until saucy.
Loosen the peanut paste with a little hot stock to thin it, then pour it into the pot along with the rest of the stock.
Return the chicken to the sauce, cover and simmer gently for 25-30 minutes, stirring from time to time so the sauce doesn't catch, until the chicken is very tender and the sauce is creamy.
Taste, adjust the seasoning and serve hot with nshima or rice.
