Preparation

  1. Cut all the vegetables into even dice.

  2. Sauté the onion and garlic in the oil, then add the eggplant and pepper.

  3. Add the zucchini and tomatoes, season with salt and pepper and simmer for 30 minutes.

  4. Serve hot or warm with a drizzle of olive oil.
