Seychellois Breadfruit Salad

- Fruit à pain — to buy1
- Red onion — to buy1/2
- Tomato — to buy2
- Lime — to buy1
- Neutral oil — to buy2 tbsp
- Fresh cilantro — to buy1/4 bunch
- Salt — to buy1 pinch
- Pepper — to buy1 pinch
Preparation
Peel the breadfruit, cut it into wedges and remove the fibrous central core.
Boil the wedges for 20-25 minutes in a large pot of salted water until a knife slides in easily, just like a potato.
Drain and let cool slightly, then cut the flesh into roughly 2 cm cubes.
Finely slice the red onion, cut the tomatoes into wedges, and mix everything with the breadfruit cubes in a bowl.
Make a dressing with the lime juice, oil, salt and pepper, and pour it over the still-warm salad so it soaks in well.
Sprinkle with chopped coriander and serve warm or cold, alongside grilled fish.
