- Onion — to buy4
- Neutral oil — to buy2 tbsp
- Tomato — to buy1
- Stock — to buy200 ml
- Salt — to buy1 pincée
- Pepper — to buy1 pincée
Preparation
Finely slice the onions.
Heat the oil in a pan over medium-low heat, add the onions and a pinch of salt.
Let the onions soften over low heat for 12-15 minutes, stirring regularly, until they're very tender and lightly golden: this long, slow cooking is what brings out their sweetness.
Add the diced tomato and cook for another 3-4 minutes.
Pour in the stock, bring to a simmer and reduce uncovered for 5 minutes until you get a smooth sauce.
Add pepper, adjust the salt and serve hot alongside nshima or grilled meat.
