Tomato-Chili Sauce

Ingredients
- Tomato — to buy6
- Chili pepper — to buy2
- Onion — to buy1
- Garlic — to buy3 cloves
- Tomato paste — to buy1 tbsp
- Olive oil — to buy2 tbsp
- Salt — to buy1 pinch
Preparation
Blanch the tomatoes for 30 seconds, plunge them into cold water, then peel and dice them (this keeps loose skins out of the sauce).
Finely slice the onion, chop the garlic, and deseed and chop the chilies (keep the seeds in if you want more heat).
Heat the oil in a saucepan, cook the onion for 5 minutes over medium heat until translucent.
Add the garlic and chilies, cook for 1 more minute until fragrant, without letting the garlic burn.
Add the tomatoes and tomato paste, season with salt, and simmer over low heat for 15 minutes, stirring occasionally, until the sauce has reduced and thickened.
Mash the last tomato chunks with a fork for a smooth texture, taste and adjust the salt and heat.
Serve hot over rice, millet boule, or alongside grilled meat.
