Speculoos spiced cookies

- Flour — to buy300 g
- Sugar — to buy200 g
- Butter — to buy150 g
- Egg — to buy1
- Cinnamon — to buy2 c. à c.
Preparation
In a bowl, mix the flour, brown sugar, cinnamon and a pinch of salt.
Add the cold butter cut into cubes and rub it in with your fingertips until you get a coarse breadcrumb texture.
Add the egg and knead quickly into a smooth ball, without overworking the dough so it stays crumbly once baked.
Flatten the dough into a disc, wrap it and let rest in the fridge for 1 hour: it will be easier to roll out and hold its shape in the oven.
Roll out the dough to 4-5 mm thick and cut out shapes with a cookie cutter.
Place the cookies on a parchment-lined baking sheet and bake at 180°C for 12 to 15 minutes, until golden and fragrant.
Let cool completely on a rack: speculoos firm up as they cool and become nicely crisp.
