Suja (Salted Butter Tea)

- Thé noir — to buy4 tbsp loose black tea leaves
- Water — to buy1 liter (4 cups) water
- Butter — to buy80 g (1/3 cup) butter
- Salt — to buy1/2 tsp salt
Preparation
Bring the water to a boil in a saucepan.
Add the loose black tea leaves, reduce the heat and simmer gently for 10 minutes until you get a very strong, almost black tea.
Strain the tea to remove the leaves, pressing lightly to extract all the liquid.
Pour the hot strained tea into a blender (or a traditional churn), and add the butter and salt.
Blend on high speed for 1-2 minutes until the butter is fully emulsified and the liquid turns frothy and slightly opaque.
Taste and adjust the salt if needed: suja should taste salty, not sweet.
Pour back into the saucepan, reheat for 2 minutes over low heat without boiling, then serve immediately in small bowls, stirring if the butter separates.
