- Cottage cheese — to buy400 g
- Egg — to buy1
- Sugar — to buy2 tbsp
- Salt — to buy1 pinch
- Flour — to buy60 g
- Butter — to buy30 g
- Cream — to buy100 ml (optional)
- Honey — to buy2 tbsp (optional)
Preparation
Drain the cottage cheese well in a colander lined with a cloth for 15 minutes: cheese that's too wet will make the syrniki fall apart while cooking.
In a bowl, mash the drained cottage cheese with a fork, then add the egg, sugar and a pinch of salt, mix well.
Work in the flour little by little until you get a soft dough that still holds together (it should stay slightly sticky, not runny).
Flour a work surface generously, shape the dough into small round patties about 1.5 cm thick, and dust them with a little flour on all sides.
Heat the butter in a pan over medium heat.
Cook the syrniki for 3-4 minutes per side, over medium-low heat, until golden outside and cooked through.
Serve warm, with sour cream, jam or a drizzle of honey.
