- Egg — to buy8
- Soy sauce — to buy150 ml
- Sugar — to buy40g
- Five-spice powder — to buy1 tsp
- Star anise — to buy2
- Cinnamon — to buy1 stick
Preparation
Boil the eggs 9 min for a just-set yolk, plunge them immediately into ice water.
Gently peel the eggs, lightly score the surface so the sauce penetrates better.
Heat soy sauce, sugar, five-spice, star anise and cinnamon with water in a saucepan.
Bring to a simmer, add the peeled eggs.
Simmer over very low heat 30 min, turning the eggs halfway for even coloring.
Turn off the heat and let the eggs steep in the hot sauce at least 2h, ideally overnight.
Serve warm or cold, halved, drizzled with a little reduced sauce.
