Czech trdelník (chimney cake)

Ingredients
- Flour — to buy400 g
- Milk — to buy150 ml
- Baker's yeast — to buy10 g
- Sugar — to buy60 g
- Butter — to buy40 g
- Egg — to buy1
- Cinnamon — to buy2 tbsp (for coating)
Preparation
Dissolve the yeast and a teaspoon of sugar in the warm milk, let sit for 10 minutes until foamy.
In a bowl, mix the flour, remaining sugar and a pinch of salt, add the egg, melted, slightly cooled butter and yeasted milk, knead for 10 minutes until smooth and elastic.
Cover and let rise for 1 hour, until the dough doubles in size.
Knock back the dough and divide it into long, thin strips about 1.5 cm wide.
Wind each strip tightly in a spiral around a trdelník roller, or a wooden rolling pin wrapped in parchment paper.
Roll each spiral in a cinnamon-sugar mix, then bake at 200°C, turning regularly, for 15-20 minutes, until nicely golden.
Gently slide the trdelník off the roller, roll it while still warm in the cinnamon sugar and serve at once.
